Smoky Al Pastor Style Tacos with Eat Up! Crumble

Smoky, spicy crumble paired with the fresh sweetness and acidity of pineapple, this dish is inspired by the traditional Al Pastor tacos served on the streets of Baja California.

Ingredients

  • 1 cup chopped pineapple
  • 2 tbsp achiote paste
  • 1 Red onion, chopped
  • 2 Tsp chile powder (ground guajillo chile pepper)
  • 3 Tbsp apple cider vinegar
  • 1 Tsp oregano
  • 1 Tsp cumin
  • 5 Tsp ground cloves
  • Salt and pepper to taste
  • 8 – 10 Tortilla Shells
  • 1 lb Eat Up! Smoky Chipotle Crumble
  • Fresh cilantro (for garnish)
  • Fresh Lime (for garnish)

Preparation

  1. Combine chile powder, vinegar, oregano, cumin, closes, and achiote paste in a small bowl, set aside
  2. Heat cast iron pan over medium, adding 1 tbsp olive oil
  3. Add Above Food Smoke Chipotle Crumble, cook for 2 minutes
  4. Add spice mixture to Crumble, continue to cook 30 seconds to 1 minute
  5. Dress tacos with crumbles, diced onion, and pineapple. Garnish with cilantro and fresh lime
